As a chef, I have had the pleasure of creating and tasting countless soup recipes over the years. However, there is one recipe that stands out above the rest as my absolute favourite for the fall and winter seasons. This soup is not only delicious and comforting, but it is also incredibly easy to make, making it the perfect choice for a cozy night in or a holiday gathering.

To create this amazing soup, you will need a few simple ingredients that can be found at any grocery store.

Ingredients

  • 1 Tbsp Olive Oil

  • 1 Medium Onion Diced

  • 1 Red Bell Pepper Diced

  • 3 Cloves Garlic Minced

  • 1 Jalapeno Seeded and Minced

  • 1 Tsp Chili Powder

  • 1 Tsp Smoked Paprika

  • 1 Tsp Cumin

  • 1/2 Tsp Salt

  • 1/2 Tsp Black Pepper

  • 14oz Diced Tomato with Green Chilis

  • 6 Cups Chicken Broth

  • 2 Cups Shredded Chicken Breast

  • 14oz Black Beans Drained and Rinsed

  • 1 Cup Corn Kernels Frozen or Canned

  • Juice of 1 Lime

Garnish

  • Avocado

  • Sour Cream

  • Tortilla Strips Fried

  • Shredded Cheese

  • Cilantro, Chopped

Preparation

  1. Cook the Aromatics: Heat the olive oil over medium heat and add the onion, bell peppers and jalapeno. 4 to 5 minutes.

  2. Add the Spices: Stir in the chili powder, smoked paprika, cumin, salt and pepper. Cook for a few minutes to release the flavours.

  3. Build the Broth: Add the tomatoes, shredded chicken, black beans and corn. Bring to a boil.

  4. Simmer: Reduce heat and let the soup simmer for 20 minutes to develop flavor. Stir in the lime juice before serving.

  5. Prepare the Garnish: Slice the avocado, chop the cilantro and fry the tortilla strips in 350 degree canola oil for 2 minutes or until crispy and golden. Be careful, they will cook quickly.

  6. Serve: Ladle the soup into bowls and garnish with sour cream, cilantro, tortilla strips and the shredded cheese.

Serving

Serve your soup alongside some crusty bread or a side salad for a complete and satisfying meal. This soup is sure to warm you up from the inside out on a chilly fall or winter day.

Storage

If you have any leftovers, store them in an airtight container in the refrigerator for up to three days. This soup also freezes well, so you can make a big batch and save some for later. Simply thaw the soup in the refrigerator overnight and reheat it on the stove for a quick and easy meal.
